Cashew icing on Acai

Cashew icing

1 Cup pre-soaked cashews
1/2 Cup coconut yoghurt
1 Tsp vanilla extract
1 Tbsp pink dragonfruit powder (optional)
1/2 Lemon juiced
2 Tbsp monk fruit icing sugar
1/3 Cup melted cacao butter or 3 Tbsp coconut oil.

Instructions

Start off by adding all the ingredients for the base to your food processor. Once blended, spread equal parts of the granola mixture into you mould.*

Press the base down firmly and equally.**

Place the mould with the granola base in the freezer whilst you prepare the cheesecake mixture.

To your high speed blender add all the ingredient for the cheesecake, blend until even and smooth. Remove the granola base from the freezer, pour the cheesecake mixture on top of the base to about 3/4 of the mould.***

Place the cheesecakes in the freezer for 4 hours to set before making the frosting. Once 4 hours have passed you can start making your creamy frosting.

Cashew icing on Acai

Add all the ingredients for the frosting to your high speed blender, blend until smooth. Pour the mixture into your pipping bag. (Don’t cut the piping bag yet)

Close the top of the piping bag firmly and leave the frosting in the fridge for 40min, this just allows the icing to firm up even more.

Once you are ready to serve, remove the cheesecakes from the moulds, cut the tip of your piping bag and add the frosting on top of your cheesecakes, drizzle with some delicious melted dark chocolate and fresh figs.

Optional you can add some additional chocolate chips for that added crunch. Enjoy!

Notes:
* Using silicone moulds for this recipe, makes it a lot easier to remove your cheesecakes. If you are not using a silicone mould, ensure the mould is wiped out with coconut oil to prevent the cheesecake base from sticking.
** To pack it down, use a small glass or the back of a spoon to compact it and really press it down. | found the bottom of a glass works well. If it sticks, | prefer separating the crust and the glass with a small piece of non stick baking paper.)
*** You don’t want to overflow the mould, leaving a gap prevents any spills when moving the cheesecakes back into the freezer.
